6 Butcher’s Pork Sausages (skins removed)
1 Onion, chopped
2 Garlic Cloves, minced
1 tsp Fennel Seeds
½ tsp Chilli Flakes (adjust to taste)
1 tbsp Tomato Purée
1 Tin Chopped Tomatoes (400g)
150ml Red Wine (optional)
1 tsp Sugar
1 tsp Dried Oregano
Salt & Black Pepper
Olive Oil
400g Pasta (Rigatoni, Penne, etc.)
Fresh Basil & Parmesan, to serve
🔥 How to Cook Spicy Sausage Ragu
1️⃣ Brown sausage – Crumble sausage meat into a hot pan and fry until golden.
2️⃣ Add flavour – Add onion, garlic, fennel, chilli. Cook until softened.
3️⃣ Simmer – Stir in tomato purée, then wine, tomatoes, oregano and sugar. Simmer for 30–40 mins.
4️⃣ Cook pasta – While sauce simmers, cook pasta until al dente.
5️⃣ Combine – Toss pasta with the ragu and stir well.
6️⃣ Serve – Garnish with fresh basil and Parmesan.
