800g Diced Lamb
1 Onion, chopped
2 Garlic Cloves, minced
1 tsp Ground Cumin
1 tsp Ground Cinnamon
1 tsp Paprika
1 tbsp Tomato Purée
400ml Lamb or Chicken Stock
100g Dried Apricots, halved
1 tbsp Honey
Salt & Pepper
Fresh Coriander, to serve

🔥 How to Cook Moroccan Lamb Tagine
1️⃣ Brown lamb – In batches, brown lamb and set aside.
2️⃣ Cook base – Sauté onion and garlic, add spices and tomato purée.
3️⃣ Combine – Add lamb, stock, apricots, honey, salt and pepper.
4️⃣ Simmer – Cover and simmer gently for 1.5–2 hours until lamb is tender.
5️⃣ Serve – Garnish with chopped coriander.
