300g Leftover Roast Meat or Sausages (sliced)
1 Onion, sliced
750g Potatoes, peeled and sliced
300ml Beef or Chicken Stock
Salt & Pepper
1 tbsp Butter

🔥 How to Cook Stovies
1️⃣ Cook onion – Sauté onion in butter until soft.
2️⃣ Layer – In a heavy pan, layer potatoes, onion and meat.
3️⃣ Add stock – Pour in enough stock to almost cover.
4️⃣ Simmer – Cover and cook on low heat for 45 mins to 1 hour, stirring gently halfway through.
5️⃣ Serve – Mash slightly if preferred, and spoon into bowls.

✔️ Add a splash of brown sauce or gravy for extra flavour.
✔️ Works beautifully with leftover corned beef too.
