1.5kg Oxtail
1 Onion, chopped
2 Spring Onions, sliced
2 Garlic Cloves
1 Scotch Bonnet (optional), whole or chopped
1 tbsp Allspice
1 tbsp Soy Sauce
1 tbsp Browning or Molasses
2 tbsp Tomato Ketchup
400ml Beef Stock
1 Can Butter Beans (optional)
Thyme, Fresh or Dried
Salt & Pepper
Oil

🔥 How to Cook Jamaican Oxtail Stew
1️⃣ Marinate – Toss oxtail in soy, allspice, thyme, garlic and browning. Rest overnight or 1 hour minimum.
2️⃣ Sear – Brown oxtail in batches, remove.
3️⃣ Build base – Sauté onions, spring onion and scotch bonnet.
4️⃣ Combine – Add oxtail, ketchup, stock. Simmer 3 hours covered.
5️⃣ Add beans – Stir in beans in final 30 mins.
6️⃣ Serve – Garnish with more thyme.

✔️ Slow cooker works well – 7–8 hours on low.
