400g Chicken Strips
150g Chorizo, sliced
1 Onion, chopped
2 Garlic Cloves, minced
1 Red Pepper, sliced
200g Paella Rice (or Arborio)
750ml Chicken Stock
Pinch of Saffron or Smoked Paprika
1 tsp Paprika
Salt & Pepper
Olive Oil
Lemon Wedges, Peas & Parsley to garnish

🔥 How to Cook Chicken & Chorizo Paella
1️⃣ Brown meat – In a large pan, cook chicken and chorizo. Remove and set aside.
2️⃣ Sauté base – Fry onion, garlic and pepper until soft.
3️⃣ Toast rice – Add rice and paprika, stir 2 mins.
4️⃣ Add stock – Pour in hot stock and saffron. Bring to simmer.
5️⃣ Combine – Return meat to pan. Simmer gently without stirring for 20–25 mins.
6️⃣ Rest – Cover with foil and rest 5 mins before serving.
7️⃣ Serve – Top with peas, lemon, and parsley.

✔️ Don’t stir once liquid is added – helps form the crispy bottom (socarrat).
